While she was walking the farm, we saw the Jerusalem Artichokes growing nicely in our new field, still green and healthy in mid-fall, growing the underground rhizomes of the vegetable. Here is a photo of us harvesting the sunchokes (or Jerusalem Artichokes) just the other day:
